POTATO and HAM SALTIMBOCCA

Ingredients

  • 4 oz potatoes
  • 1.75 cups all-purpose flour
  • 2 tbsps water (or milk)
  • 1 egg
  • Half tsp salt
  • Half tsp instant yeast for savory preparations
  • 2 slices cooked ham
  • grated parmesan
  • 5 oz provolone cheese

Steps

  • Boil the potatoes, then peel and mash them with a potato masher in a bowl.

  • Combine the flour with the yeast, mix, add the egg, salt, mix and add the water or milk and mix again.

  • Dust the surface with flour and shape into a rectangle, then divide it into 8 or 12 pieces.

  • Alternatively, divide the dough and make squares individually.

  • Stuff with pieces of provolone and ham then fold over opposite corners and press a bit to keep them from opening.

  • Place them on the baking tray, oil and sprinkle with parmesan and bake, cook at 356°F for about 15-20 minutes.
