Rolled Cookies in Air Fryer

The Rolled Cookies, cooked in a air fryer are delicious shortcrust pastries filled with jam. I chose mixed berries, my favorite along with strawberry.
The Rolled Cookies are ideal to serve during an afternoon snack with friends or as a dessert after dinner, accompanied by a good coffee. Convenient to carry and to give to your little ones as a school snack.

For this recipe, I prepared the shortcrust pastry with a portion of cereal flour for a more rustic taste, but they can be made with a classic shortcrust using only all-purpose flour like the Nutella Cookies. Making them is really simple and you won’t need special tools like for the Rustic Cookies.

For a good result of the Rolled Cookies it’s essential to have a double rest in the fridge and freezer, the first for the shortcrust dough and the second after filling and rolling the logs which, once cooked, will be cut into cookies

Ingredients for 20 rolled cookies

  • 1 1/2 cups cereal flour (or all-purpose flour)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter (cold)
  • 2 eggs (medium)
  • 1 lemon (zest grated)
  • 1 pinch salt
  • as needed jam (mixed berries)
  • as needed powdered sugar

  • 1 Air Fryer
  • 1 Bowl
  • 1 Lemon Grater
  • 2 Parchment Paper sheets
  • 1 Knife

Steps

How to prepare Rolled Cookies in an Air Fryer

  • Pour all the ingredients into a bowl except for the butter

  • Work the mixture with your hands until you get a sandy texture

  • Add the cold butter from the fridge cut into pieces and work quickly until you get a homogeneous mixture

  • Wrap the cookie dough with plastic wrap and let it rest for 1/2 hour in the fridge or if you have little time in the freezer for 15 minutes

  • After resting, divide the dough into two parts, roll them out with a rolling pin to a thickness of about 1/4 inch, between two slightly floured sheets of parchment paper, forming 2 rectangles. Spread the mixed berries jam or the flavor you chose, leaving a bit of edge on all 4 sides

  • With the help of the parchment paper, roll them up from the long side, forming the rolls

  • Seal well the closure and the two ends with light finger pressure to prevent jam from leaking during cooking. Place them back in the freezer wrapped with parchment paper for 15 minutes

  • After resting, place the two rolls with the sealed side down on the fryer grill or tray

  • Preheat the fryer with the bake or air fry program at 340°F for a few minutes, 2 or 3 are enough, and cook for 15 minutes. Raise to 355°F and continue for another 5

  • Wait for the rolls to cool a bit before removing them from the tray or grill

  • once the shortcrust pastry has completely cooled, you can cut your cookies, sprinkle with powdered sugar, and enjoy!
