Spoon Buns in Air Fryer

I had been thinking about making these no-knead buns in the Air Fryer for a while, and finally I did it… here’s the Spoon Buns for you. A clever and easy recipe, accessible to everyone, just like my liquid focaccia! No mixers or special appliances are needed, the only tool you need, besides the bowl where you work the dough, is a spoon! If you’re not skilled with baking, especially with bread, this recipe is for you, the result is gratifying.

For this Spoon Buns recipe, I used my Ninja Combi for both rising and baking, and I am really thrilled with the result. You can let the dough rest in the oven with the light on, as I indicate in the preparation steps. You can also bake it in the oven if you don’t have the air fryer, find the times and temperatures at the end of the recipe.

  • 3 1/4 cups Manitoba flour
  • 1 1/4 cups water (lukewarm)
  • 2 tsp instant yeast
  • 1 tbsp extra virgin olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • as needed re-milled durum wheat semolina flour

  • 1 Bowl
  • 1 Spoon
  • 1 Spoon large or ladle
  • 1 Air Fryer
  • 1 Teaspoon coffee spoon

Steps

How to prepare Spoon Buns in Air Fryer

  • Start by dissolving the yeast in a cup with 1/4 cup of the lukewarm water and a coffee teaspoon of sugar. Mix well and let it rest for 5/10 minutes to activate it. When you see foam on the surface, the yeast is ready to use.

  • Meanwhile, pour the flour into a bowl, creating a well in the center.

  • Once the yeast is ready, add it to the remaining 1 cup of lukewarm water, mix, and pour it into the center of the flour, starting to mix with a spoon.

  • When the water is completely absorbed and the dough is sticky, add the salt and the oil in two additions, always mixing with the spoon.

  • Add the rest of the olive oil and mix until the dough detaches from the sides of the bowl. You should get a soft mixture; if it seems too firm and hard, add water little by little until you reach the right consistency.

  • The dough is ready, cover it with a cloth and let it rise in the oven with the light on for about 2/3 hours until doubled.

  • Once rested and the dough has doubled, you can prepare your buns.

  • With a large spoon or ladle, scoop the dough and place it on a tray or the air fryer grill.

  • Sprinkle with re-milled durum wheat semolina flour and use scissors to make V cuts in the center of the buns.

  • The imperfect shape of the buns will give a more rustic effect.

  • Preheat the air fryer to 356°F (180°C) for 2/3 minutes on the bake or air fry program. After preheating, insert the tray and start baking at 356°F (180°C) for 25 minutes.

  • After the initial baking, increase the temperature to 392°F (200°C) and continue for 5 minutes.

  • The bread should be golden on the surface. Let it cool for a few minutes, then transfer it to a breadbasket or plate.

  • Once ready, transfer the dough to a non-stick baking pan. Pour 2 cups of water into the combi pan, place a rack on top, and set the pan with the bread dough inside the Combi.

  • Switch to Combi Cooker.

  • Start the “Prove” program at 95°F (35°C) for 1 hour and 45 minutes. Once ready, proceed with preparation and cooking as indicated above.

  • Crispy outside and soft inside!

Preheat and bake the buns at 392°F (200°C) for about 25/30 minutes. You can turn on the grill for the last 5 minutes for an even crispier crust.
