I named these treats Autumn Cakes, cooked in the Air Fryer, for the use of ingredients that make you think of this season. They are not muffins, or rather in shape they are, but the texture is not characteristic of this dessert.

The Autumn Cakes are sweets made with a batter based on eggs, flour, sugar, oil, milk and enriched with dried figs, walnuts, raisins, and to make them more delicious I added dark chocolate flakes on the surface which you can replace with chips. The Autumn Cakes are simple and quick to prepare, I recommend, before starting, to rehydrate the raisins in water, chop the walnuts and cut the dried figs, so you will have everything ready when it is time to add them to the batter.

If you don’t have the Air Fryer, the Autumn Cakes can also be baked in the oven, I’ll leave you the directions in the tips section at the end of the recipe.

Ingredients for 11 Autumn Cakes

  • 1 1/2 cups all-purpose flour
  • 1/4 cup milk
  • 3 tbsps sunflower oil (or corn oil)
  • 3/8 cup sugar
  • 2 eggs
  • 3.5 oz dried figs
  • 2.5 oz walnuts
  • 1.5 oz raisins
  • 1 packet baking powder
  • 1.75 oz 50% dark chocolate
  • to taste powdered sugar (optional)

  • 1 Air Fryer
  • 1 Electric Whisk
  • 11 Muffin Molds paper and aluminum
  • 1 Bowl
  • 1 Knife
  • 1 Cutting Board
  • 1 Spatula or wooden spoon

Steps

How to make Autumn Cakes in Air Fryer

  • In a bowl, mix the sugar and oil with the electric whisk

  • Add one egg at a time and mix until well incorporated

  • Add the second egg and mix again

  • Add the lukewarm milk and mix

  • Add the sifted flour and baking powder to the mixture and work the batter for about 5 minutes

  • Add the well-squeezed raisins, diced figs, and chopped walnuts

  • Mix well with a spatula or wooden spoon

  • The batter is ready

  • Use two spoons to fill the paper molds, which you will have inserted into the aluminum ones

  • Add chocolate flakes or chips on top. Preheat the air fryer to 340°F for 2-3 minutes and after preheating, place the molds on the rack of the air fryer

  • Activate bake or air fry program at 340°F for 20 minutes

  • Perform the toothpick test; if dry, the cakes are ready, otherwise continue for a couple of minutes. Let them cool completely before serving

  • Here are the Autumn Cakes ready, you can sprinkle them with powdered sugar and enjoy

Storage of Autumn Cakes

The Autumn Cakes can be stored for several days, you can cover them with a dome or keep them in an airtight container

Variations of Autumn Cakes

If you do not have paper molds, you can use aluminum or silicone ones. Remember that aluminum ones need to be greased and floured before pouring the batter, while silicone ones do not.

With these doses, you can also make a cake using a non-stick mold of 18/20 cm., greased and floured. Preheat the air fryer and cook at 320°F for about 30 minutes, always doing the toothpick test.

Oven Baking of Autumn Cakes

The Autumn Cakes can be baked in a preheated oven at 350°F for about 30 minutes
