Here’s a version of Stuffed Bell Peppers, cooked in an Air Fryer, meatless, but with a filling of breadcrumbs and cheese enriched with sun-dried tomatoes, raisins, anchovies, and capers. Perfect as an appetizer or a very easy-to-prepare second course, let’s still use this period to consume them in a unique and tasty way.
Bell Peppers are not only rich in vitamin C and a good source of minerals, but they are also an ingredient with countless preparations that can enrich meat or pasta dishes, giving them the unmistakable flavor that characterizes them. For the Stuffed Bell Peppers recipe, I used the Air Fryer, both to roast them and to cook them with their filling, all in a short time. You can prepare them in stages, perhaps cooking the peppers the day before and focusing on the filling the next day. If you haven’t done so yet, try those filled with sausage for a delightful contrast between the sweetness of the pepper and the more intense taste of the sausage.

Ingredients
Ingredients for 11 stuffed bell peppers
- 2 bell peppers (roasted)
- 0.7 oz salted capers
- 0.7 oz raisins
- 4 canned anchovies
- 2 sun-dried tomatoes in oil
- 2 tbsps breadcrumbs (plus extra for finishing)
- 2 tbsps grated Grana Padano cheese
- 1 bunch chopped parsley
- 1 drizzle extra virgin olive oil

- 1 Mixer
- 1 Air Fryer
- 1 Spoon
Steps
To prepare the peppers follow the steps of Roasted Bell Peppers in Air Fryer and once ready return here
Before starting, rehydrate the raisins in a cup or bowl with warm water for 10 minutes, then squeeze and place them in the chopper along with the parsley, capers, anchovies, and sun-dried tomatoes
You should obtain a soft mixture
Now add the 2 tablespoons of grated Grana Padano cheese and breadcrumbs
Add a drizzle of oil
Adjust salt if necessary, grind a bit of pepper, and mix with a spoon
After peeling and cleaning the peppers, divide them into strips and lightly salt them
Distribute the filling with a spoon over each pepper slice, then take the end and roll it onto itself
Proceed in this way for all the pepper slices
Pour the breadcrumbs into a bowl and coat the roll
As you bread them, place the rolls in a slightly greased baking dish. Drizzle with a bit of evo oil
Place the dish in the air fryer directly on the perforated grill and start cooking at 392°F for 10 minutes. I used the bake (oven) cooking, but you can cook in air fry
Once the surface of the rolls is golden, you can remove the dish from the air fryer
Wait for them to cool a bit and serve your stuffed bell peppers
