If you don’t want to use meat, you can prepare the rolls in a vegetarian version, using a preparation of breadcrumbs, cheeses with spices to taste. - 2 bell peppers (roasted)
- 7 oz sausage (pork)
- 1/2 onion
- 1 oz white wine
- 1 oz pecorino romano
- 2 oz pecorino sardo (or semi-aged cheese)
- 1 bunch chopped parsley
- 2 tbsps breadcrumbs
- 1 tbsp Grana Padano grated (or Parmesan)
- 1 egg yolk

- 1 Air Fryer
- 1 Knife
- 1 Cutting board
- 1 Pan
- 1 Wooden spoon
Steps
How to Prepare Bell Pepper and Sausage Rolls in Air Fryer
To cook the bell peppers, follow the steps for Roasted Peppers in Air Fryer and once ready, come back here
Sauté the onion in a pan with a drizzle of oil. Once softened, add the sausage, removed from its casing and well crumbled
Let it brown, deglaze with white wine and continue cooking for a few minutes
Once ready and cooled, add the egg yolk and breadcrumbs
Add the grated pecorino romano, pepper, parsley, and a pinch of salt. Be careful not to over-salt as the sausage is already savory, and you might end up with a dish that’s too salty
Mix the mixture well
Take your already cooked and peeled bell peppers, cut and dry them with paper towels. This helps keep the filling compact without getting soggy
Place the sausage mixture in the center and add some pieces of pecorino or the cheese you’ve decided to use
Roll them up to form the rolls
Coat them in breadcrumbs and place them in a lightly oiled small baking dish
Sprinkle the surface with a tablespoon of grated Grana and drizzle with a little extra virgin olive oil. Place the dish on top of the rack and insert it into your fryer
Cook the rolls at 356°F (180°C) for 10 minutes, then continue at 392°F (200°C) for 3-4 minutes, just enough time to let them gratinate and the cheese melt and become stringy
Once ready, remove them from the fryer’s drawer
Let them cool for a couple of minutes before serving and enjoying your Bell Pepper Rolls with Sausage, and enjoy your meal!
