Baked Lemon Chicken is a light and tasty main course, nothing to envy from the classic baked chicken with potatoes or Mediterranean chicken recipes. Today’s recipe is really simple and delicious, thanks to the lemon’s citrus touch. You can serve baked lemon chicken with Texan potatoes or crunchy vegetables. It’s very versatile; you can use a whole chicken or pieces, seasoning it with your preferred spices. In my version, I used rosemary, garlic, olive oil, and naturally marinated everything in lemon. Ingredients
- 1.76 lbs chicken (chicken in parts)
- 2 lemons
- to taste salt
- 1 sprig rosemary
- to taste extra virgin olive oil
- to taste garlic powder
- to taste white wine (to deglaze the meat)
How to prepare baked lemon chicken
Take the chicken thighs and season them with salt, pepper, and garlic powder, then slice the lemon.
Season the chicken with oil, lemon juice and slices, then let it marinate for about an hour.
Bake at 356°F for about 50 minutes or until the chicken is golden and the meat is tender. Halfway through, turn it and deglaze with white wine.
Remove from the oven and serve the baked lemon chicken hot; you can also accompany it with Basmati rice.
Storage and tips for baked lemon chicken
Like many white meats, once cooked, we can store them in an airtight container in the refrigerator for up to two days. You can also cook the lemon chicken in a pan accompanied with potatoes and small onions, and you can substitute lemon with orange.
