Ingredients for 4 servings
- 2 bell peppers (red and/or yellow)
- 1 fresh spring onion (or Tropea onion)
- 1.4 oz raisins
- 0.7 oz pine nuts
- 3 tbsp extra virgin olive oil
- 3 tbsp white wine vinegar
- brown sugar (2 and 1/2 tablespoons)
- 1.8 oz pitted olives

Steps
Before starting, soak the raisins in a small bowl with warm water for 10/15 minutes to rehydrate them. Wash and dry the bell peppers and use the peeler to remove the skin
Split them and remove the seeds and inner filaments. Cut them into strips
Slice the fresh spring onion not too thin
Take the non-stick tray and add the ingredients, bell pepper, spring onion, pine nuts, olives, and rehydrated raisins, draining them well, and salt to taste
Prepare the mixture of oil, vinegar, sugar, a pinch of salt and emulsify with a hand whisk
Pour the mixture into the tray of peppers and mix everything well
Put the tray in the fryer and cook on the air fry program at 356°F for 20 minutes. Then, increase the temperature to 392°F and continue cooking for 5 minutes. Stir a couple of times and add a small cup of water if needed
Remove the tray from the fryer and let it cool
Your Sweet and Sour Peppers are ready. Serve them warm or cold to better enjoy the taste😍
