You absolutely must try these Eggplant Pizzettes in Air Fryer… they are amazing! They are very simple to prepare and are cooked in two stages: the first involves cooking the sliced eggplant in white and well-oiled, the second cooking with the topping for a few minutes, just enough time to melt the cheese. But don’t worry, the preparation is quick! While the eggplant slices cook in the Air Fryer, you move on to preparing the condiment you will use to top the Eggplant Pizzettes, which involves a base of cherry tomato puree, cooked with a sauté of fresh scallion, to give body and sweetness to the sauce, enriched with pitted olives, in my case the leccine ones. To give an even stronger flavor to the Eggplant Pizzettes, I chose spicy provolone cheese, creating a delicious contrast between the delicacy of the sauce and the intense flavor of the cheese… fabulous!!!

Ingredients for 9 Eggplant Pizzettes
- 1 round eggplant
- 1 cup tomato puree (cherry or piccadilly)
- 1/2 fresh scallion
- 1/3 cup pitted olives (leccine, taggiasche, or black)
- 1.5 oz spicy provolone (grated)
- A few leaves basil
- to taste extra virgin olive oil
- A few sprays seed oil
- to taste salt

Steps
After washing and drying the eggplant, trim both ends and cut them into slices about 1/2 inch to 3/4 inch thick
Place them on the tray (grease it before arranging the eggplant slices) or on the air fryer grill. Spray plenty of oil, as eggplants require a generous amount to avoid dry and tough slices
Insert the tray or drawer with the eggplants and start the air fry program at 356°F for 18/20 minutes. If you notice they are drying out during cooking, add a few more sprays of oil.
While the eggplants are cooking, prepare the sauce to top them. Clean the scallion and sauté it with a drizzle of extra virgin olive oil
As soon as the scallion is golden, add the tomato puree
Add the olives, a pinch of salt and cook it for about 15 minutes, towards the end of cooking, add some torn basil leaves
The eggplants are ready, lightly salt them and leave them on their tray
Place a few tablespoons of sauce on each slice, depending on the size of the slice
Place a pile of julienne-grated provolone on top and gently press with the back of a spoon to prevent it from flying all over the air fryer
Place back in the fryer at 356°F for 5 minutes, just enough time to melt the cheese.

Storing Eggplant Pizzettes
The Eggplant Pizzettes can be stored in the refrigerator for 2/3 days, well covered with plastic wrap. You can reheat them in the fryer for a few minutes before serving
Variations of Eggplant Pizzettes
You can replace the spicy provolone with other types of cheese, even with well-drained mozzarella to prevent it from releasing too much liquid during cooking.
You can use raw tomato puree as I mentioned earlier, seasoned with oil, salt, and oregano if you like, I preferred to cook it to make it more full-bodied and flavorful.
You can also choose to use other types of olives like pitted black or taggiasca olives, if you don’t like them or don’t have them, you can also omit them
