Ingredients

  • 1 bell pepper
  • 2 zucchini (green or white)
  • 2 potatoes
  • 2 oz breadcrumbs
  • 1 oz grated Parmesan (or Grana Padano)
  • 3.5 oz bacon (streaky) (thick cut)
  • seed oil (or extra virgin olive oil)

  • 1 Knife
  • 4 Metal Skewers or wooden
  • 1 Peeler

Steps

  • After washing and peeling the potatoes, slice them as in the picture, blanch them in salted boiling water for a few minutes. Drain and let them cool down

  • While the potatoes are cooling, wash the bell pepper and remove the skin with the peeler

  • Cut it in half, remove the seeds and inner filaments, rinse and dry it. Cut it into slices and then into rectangles

  • Move on to the zucchini, after washing and drying them, trim the ends and cut them into not too thin slices. Set them aside

  • Take the bacon and cut it into rectangles

  • Now you can start assembling the skewers by alternating potatoes, bell peppers, bacon, and zucchini to complete the skewer. Repeat the sequence for all skewers

  • In a bowl, combine the breadcrumbs, Parmesan, salt, and pepper. Mix

  • Transfer the skewers to a rectangular tray, spray them with oil, and sprinkle the breadcrumb mix on top, rolling them so the coating sticks as much as possible

  • Place the skewers on the air fryer grill without overlapping them and spray a bit more oil evenly

  • Put the skewers in the air fryer and cook with the air fry program at 356°F (180°C) for 20/23 minutes, until the vegetables’ surfaces are golden. If needed, turn them during cooking

  • You can take the skewers out of the air fryer

  • Salt them to taste and serve hot and crispy😍😋
