Ingredients for 12 portions of gratinated tomatoes
- 6 San Marzano tomatoes
- 0.5 oz capers in salt
- 3 anchovies in oil
- 3 tbsps breadcrumbs
- 2 tbsps grated Grana Padano
- 3 tbsps extra virgin olive oil
- to taste salt and pepper
- to taste dried oregano

What you need to prepare the gratinated tomatoes in the air fryer
- 1 Non-stick baking tray
- 1 Knife
- 1 Cutting board
- 1 Bowl
- 1 Spoon
- 1 Air Fryer

Steps
Wash and dry the tomatoes. On a cutting board and using a knife, cut them in half lengthwise
As you cut the tomatoes, transfer them to the tray. Salt and drizzle them with a little oil
Place the tray in the air fryer and cook at 356°F for 20 minutes
Meanwhile, prepare the mixture for the gratin. First, rinse the capers in a small bowl with cold water for 10 minutes, then drain and rinse them well to remove all salt residues. Take a bowl and combine all the ingredients: 2 tablespoons of Grana Padano, 3 level tablespoons of breadcrumbs, capers, minced anchovies, 3 tablespoons of extra virgin olive oil, a pinch of salt, pepper, and oregano to taste. Mix and blend well with the help of a spoon
After the first cooking of the tomatoes, remove the tray and cover the surface of the tomatoes with the breadcrumb mixture.
Press gently with the back of the spoon to adhere well
Return the tomatoes to the air fryer and cook at 392°F for 5 minutes
The surface should be golden
To enjoy them at their best, let them cool slightly before serving. They are also excellent cold at room temperature

I’m not sure if you will have any left, but if you do, you can store the tomatoes in the refrigerator for a few days, in their tray covered with plastic wrap or in a well-sealed container
