In this case, I chose speck and gorgonzola, but you can think of other alternatives like vegetables or other types of cold cuts. - 1 package phyllo dough (about 15 sheets)
- 2.8 oz sliced speck
- 6.3 oz gorgonzola
- to taste extra virgin olive oil
- 0.7 oz walnut kernels

Steps
Grease the baking tray you will use for cooking the phyllo dough accordion with some extra virgin olive oil
Open the package of phyllo dough and always brush half of the first sheet with olive oil
Fold it in half and make small folds to form the “accordion”
Insert the sheet making it adhere to the edges of the tray
Do this with all the sheets and, as you prepare them, insert them into the tray. I used a square tray; ideally, a rectangular tray would be better
Fill the gaps in the phyllo with speck slices
Add gorgonzola in the gaps and brush the entire surface with oil
Preheat the air fryer for 2/3 minutes and transfer the tray; cook with bake function at 170°C (338°F) for 10 minutes or until the surface becomes golden.
Here it is ready
Sprinkle with chopped walnut kernels and serve it hot and crispy

Tips
The phyllo dough accordion should be consumed the same day to enjoy it crispy. If there are leftovers, it can be stored in the refrigerator for a couple of days in its tray, well covered, and reheated in the air fryer or oven for a few minutes

Bake the accordion in a preheated oven at 200°C (392°F) for about 20 minutes, until the surface is golden
