To fill the Pistachio and Mortadella Lasagna Rolls, it takes just a few minutes: prepare the béchamel and the pistachio pesto, which will then be combined, layer the sheets, roll them up, put them in the freezer for a few minutes, cut them, put them in a pan, and cook them.

- 2 cups milk
- 3.5 tbsps butter
- 0.4 cups flour
- to taste salt and pepper

- 2.5 tbsps sunflower oil
- 6 leaves basil
- to taste salt and pepper
- 6 sheets fresh egg lasagna
- 3.5 oz mortadella with pistachios
- 5.5 oz provola (sliced)
- 0.7 oz pistachio crumbles
- to taste Grana Padano grated (or Parmesan)

Steps
How to prepare Pistachio and Mortadella Lasagna Rolls in Air Fryer
In a glass, insert all the ingredients to prepare the pistachio pesto
Blend with the immersion blender until you get a thick mixture
For the preparation of the béchamel, follow the steps in the recipe of Lasagna with Mushrooms and Sausage in Air Fryer and come back here to continue the preparation
Béchamel ready
Add the pistachio pesto and mix
Take the first sheet, cover it with a layer of pistachio béchamel, and sprinkle with grated Grana Padano or Parmesan
Cover with mortadella
Add a slice of provola cut in half as shown in the photo
Roll the sheet from the long side, gently squeezing, forming a roll
Proceed with the rest of the sheets with the same sequence. Once ready, wrap all the lasagna rolls with plastic wrap and place them in the freezer for 20 minutes. This step helps facilitate cutting the sheet
After the rest time in the freezer, cut the rolls to this thickness or slightly larger
Take the baking tray and cover the base with pistachio béchamel
Place the lasagna rolls obtained inside the tray
Cover the surface with the remaining béchamel and the grated Grana or Parmesan
Place the tray in the air fryer and cook at 340°F for 10 minutes. If you have a smaller fryer, you can divide the rolls into two trays and cook them separately
While the rolls are cooking, roughly chop the pistachios if you don’t have crumbles like me
The Rolls are ready
Sprinkle the surface with pistachio crumbles and serve…so good!!!
