Pumpkin, Chickpeas, and Tuna Patties

Pumpkin, chickpeas, and tuna patties are simple and delicious. Made simply with pumpkin, I chose the delica, small in size compared to other pumpkins and ideal for frying, then added canned natural tuna and pre-cooked chickpeas. They are prepared and cooked in just a few minutes and are perfect to be served as an appetizer, starter, or main course with your favorite side dish. Try other recipes with pumpkin or chickpeas.

Ingredients

  • 7 oz delica pumpkin (cleaned, peeled)
  • 2 oz canned chickpeas
  • 1.8 oz canned natural tuna
  • 0.7 oz breadcrumbs
  • 1 lemon
  • to taste extra virgin olive oil
  • to taste fine salt
  • to taste black pepper

Steps

To prepare the pumpkin, chickpeas, and tuna patties…

  • Take the pumpkin, cut it in half, remove the skin and seeds with a spoon, then cut it into cubes about 0.5 – 1 inch in size.

  • In a pan, pour the extra virgin olive oil and when it is hot, add the pumpkin cubes to brown. Cook them for about 10 minutes, adding a few tablespoons of water if necessary until they become soft and dry.

  • While the pumpkin is cooking, place the well-drained and rinsed canned chickpeas, along with the drained canned natural tuna, in the chopper.

  • When the pumpkin is cooked, add it to the chopper and blend until you get a homogeneous mixture.

  • Transfer the mixture to a bowl, add the breadcrumbs, and season with grated lemon zest, salt, and pepper. Mix with the spoon and form patties about the size of a walnut.

  • Place the patties in the basket of the air fryer or on a non-stick or parchment-lined baking tray for oven cooking.

  • Cook the patties at 392 °F for 15 minutes in the air fryer, or at the same temperature and time in a preheated oven, cooking them in convection mode.

  • Serve the pumpkin, chickpeas, and tuna patties hot with your preferred side dish.
