Stuffed Eggplant Cutlets in Air Fryer

The Stuffed Eggplant Cutlets are an original and tasty recipe, a version that, thanks to cooking in an air fryer, combines taste and lightness. They will win you over with their crunchy coating and the filling of ham and melting cheese! Among the recipes with eggplants, stuffed eggplant cutlets are a must-try.

To make the Stuffed Eggplant Cutlets in an air fryer, you need to slice the eggplants to the same thickness, sprinkle them with salt to draw out their moisture and bitter taste, stuff them, and proceed with the breading. Once ready, spray them with oil and proceed with cooking. For the filling, I used cooked ham and sliced cheese. Scamorza, Edam, or provolone, whether sweet or smoked, are all fine. Choose based on your taste.

You can serve the cutlets either as an appetizer or as a main course, but they can also be the filling of a delicious sandwich.

Ingredients for 13 Stuffed Eggplant Cutlets

  • 2 black oval eggplants
  • 4 oz oz breadcrumbs
  • 2 tbsps Grana Padano cheese, grated
  • to taste pepper
  • 2 eggs (large or 3 medium)
  • to taste flour
  • to taste coarse salt (to purge the eggplants)
  • 3.5 oz oz cooked ham
  • 4 oz oz cheese (sliced)

  • 1 Knife
  • 1 Cutting board
  • 1 Colander
  • Paper towels a few sheets
  • 3 Bowls
  • 1 Air Fryer

Steps

  • Wash and dry the eggplants. On a cutting board, remove both ends

  • Cut them into slices about half a centimeter thick

  • Take a colander and place a first layer of eggplants, sprinkling them with coarse salt. Continue until you’ve used up all the eggplants. Let them sit for about 30 minutes. This will allow the eggplants to lose their moisture and bitter taste.

  • After the resting time, rinse and gently squeeze them. Dry with paper towels to remove excess water

  • Now take 2 slices of eggplant of roughly the same size to make them match. On one of the two, place a piece of cooked ham and one of cheese

  • Cover with the other slice

  • Coat the eggplant in flour, covering it completely

  • Then dip it in beaten eggs

  • And finally, in breadcrumbs, pressing lightly to adhere well to both sides and around the eggplants

  • Continue like this until you have finished all the eggplant slices

  • Grease the air fryer rack, place the cutlets, and spray oil on the surface on both sides. Cook at 356°F (180°C) for 15 minutes

  • If necessary, turn them and continue cooking for another couple of minutes. Salt them at the end of cooking

  • Your cutlets are ready to be served

Preservation of Stuffed Eggplant Cutlets

As with all fried preparations, it is advisable to consume the Stuffed Eggplant Cutlets as soon as they are cooked. If there are leftovers, they can be stored for a couple of days in the refrigerator. I recommend spraying them with a bit of oil before reheating to make them crispy again.
