Ingredients

  • 5 white zucchinis (or green)
  • 1 oz breadcrumbs
  • 1.4 oz grated parmesan (or grana padano)
  • 2.1 oz fontina cheese (diced)
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste chopped parsley
  • to taste salt and pepper

Steps

  • Wash the zucchinis well and, on a cutting board or work surface, remove the two ends

  • Cut them in half lengthwise and score the perimeter of the pulp, leaving about 0.4 inches

  • You can blanch the zucchinis in a pot with boiling water for about 10 minutes, testing with the prongs of a fork to check doneness. They should be cooked but firm, or cook them by steaming.
    I cooked them in my Ninja Combi 12 in 1 which is a multicooker besides being an air fryer with steam function. I added two cups of water in the tray with the air fry rack on which I placed the cut zucchinis.

  • Steam cooking in the Ninja Combi using the “steam” program for 10 minutes

  • Once ready, let them cool

  • With the help of a teaspoon, scoop out the zucchinis and coarsely chop the pulp with a knife. Let the shells drain while you work on the filling.

  • Sauté a clove of garlic with extra virgin olive oil in a small pan.

  • Remove the garlic and add the zucchini pulp

  • Cook the pulp over moderate heat for about 10 minutes

  • Once cooked, add the grated parmesan or grana, breadcrumbs, chopped parsley, salt, and pepper. Add more olive oil if the mixture is a bit dry.

  • Mix the mixture and add the diced cheese, mixing again.

  • Oil the bottom of a baking tray and insert the zucchinis as you fill them. Drizzle with a little extra virgin olive oil

  • Transfer the tray to the air fryer and cook at 392°F for 10 minutes

  • They should be nicely golden on the surface

  • Here they are ready, let them cool slightly before serving

Bake in a preheated oven at 392°F for 25/30 minutes
