Penne with Salmon and Cream is a classic and quick first course, especially for those who have little time to spend in the kitchen but still don’t want to compromise on taste. To prepare this dish, I always use a part of fresh salmon and a part of smoked salmon, balancing the flavors, equalizing the more delicate taste of fresh salmon with the stronger smoked salmon. However, if you prefer, you can use only smoked salmon and vice versa. Essential is the cream, fresh not cooking cream, which, in addition to providing an irresistible creaminess, enhances the taste of the other ingredients without overpowering them.
If you have a fish-based lunch or dinner, you can pair it with a starter of Gratinated Mussels and a Sea Bream in Air Fryer as a second course.

Ingredients for Penne with Salmon
- 10.5 oz salmon steak (or fillet)
- 4.4 oz smoked salmon (affumicato)
- 1 golden onion (small or half if large)
- 2 tbsp butter
- 0.55 cup fresh liquid cream
- 3 tbsp white wine
- 1 bunch chopped parsley
- salt and pepper
- 8.8 oz penne rigate

Steps
Start by removing any bones from the salmon and the skin. Wash it and dry it with paper towels
On a cutting board, cut it into not too small cubes
Peel the onion and sauté it in a pan with butter and a drizzle of extra virgin olive oil
While the onion cooks, also cut the smoked salmon steak. Meanwhile, put the pot with salted water on the stove to cook the penne
Cut the salmon into cubes like the fresh one
Add it to the onion
Deglaze with white wine
As soon as the wine has completely evaporated, add the liquid cream, mix and let it flavor for a few minutes. Adjust salt and add a good sprinkle of pepper
Drain the pasta, reserve some cooking water and add it if the sauce seems a bit dry, add it to the pan with the salmon and add the chopped parsley.
Mix well to combine the ingredients well. Adjust salt and pepper if necessary
Serve the penne with salmon…enjoy your meal
