Sole Fillets en Papillote, cooked in an Air Fryer, is a recipe where the flavors and aromas remain enclosed, blending together, making the fish soft and succulent.
Like cod, sole is a common fish on our tables, tender, with a delicate flavor and boneless, making it perfect as a dish to offer to the little ones in the family. Very similar to sole in nutritional terms, but cheaper and you can find it both fresh and frozen, the latter is what I used for this recipe, defrosting it in the refrigerator before cooking it. I am sure you will love it prepared this way.
Sole Fillets en Papillote cooked in an Air Fryer, are an excellent choice for those following a diet who need to reduce fats but do not want to give up taste, and for those with hypercholesterolemia issues. For this recipe, besides cherry tomatoes, I chose to use Taggiasca olives and salt-cured capers, but you can add or substitute ingredients based on the tastes of the whole family.

Steps
Remember to defrost the fillets before cooking
Pat the sole fillets dry with paper towels and place them on a sheet of parchment paper. If you prefer, you can put two fillets per packet; I love individual servings, so I decided to prepare one packet to avoid dividing portions. Add all the ingredients you have decided to use, in this case, cherry tomatoes cut in half, olives, previously desalted capers, coarsely chopped parsley, including some stems, extra virgin olive oil, salt, and pepper.
Fold into a packet and secure the two ends with kitchen twine
Repeat for all the fillets

Place them on the fryer rack
Cook at 356°F for 15 minutes
You can serve your packets… you’ll smell that wonderful aroma!
Oven Cooking for Sole Fillets en Papillote
Preheat the oven to 356°F, transfer the fish packets to a baking tray or inside a baking dish and cook for 15/20 minutes
Variations of Sole Fillets en Papillote
Cherry tomatoes can be replaced with cherry or Piccadilly tomatoes, or use only red or yellow cherry tomatoes. If you don’t like capers, don’t add them, use a spice you like or fresh chives
