Steps
Start by marinating the chicken: place it in a baking dish with coconut milk, salt, and pepper. Let it rest for 1 hour at room temperature covered with plastic wrap. If you like, you can add spices like curry. If the slices are thick, flatten them with a meat tenderizer before adding the milk.
After the resting time, pour the coconut flour into another baking dish and
Drain the chicken slices and coat them well with the flour on both sides.
As you flour the chicken, transfer it to a baking tray or directly onto the grill of your air fryer, spraying a little oil on both sides
Cook at 356°F for 10 minutes, raise to 392°F and continue for another 3 minutes until the surface is golden.
If necessary, turn it for more even browning during cooking.
Your coconut chicken is ready, salt to taste and serve hot accompanied by a salad or a sauce.
Coconut Chicken Storage
The Coconut Chicken can be stored in the refrigerator for a couple of days and you can reheat it in the air fryer when needed for a few minutes.
