The Stuffed Liquid Focaccia, cooked in an Air Fryer is perfect if you don’t have time to knead and let the dough rise, in less than 30 minutes, including preparation and cooking, you’ll have a soft focaccia with a golden and crunchy crust, irresistible.
The Liquid Focaccia is a great base for your pizzas and focaccias, with few ingredients, without effort and without dirtying your hands! Delicious even cold, this focaccia is perfect for any occasion and, with the start of spring, a great idea for your picnics and day trips, soft and fluffy for several hours. You can enjoy it on its own or fill it with whatever you prefer, cold cuts, cheeses, or grilled vegetables.
The Liquid Focaccia can be cooked either in an Air Fryer or in the oven. You’ll find the instructions in the tips section at the end of the recipe. The quantities I indicate are for a 9×11 inch rectangular baking pan, you can halve the quantities and use a 7-8 inch pan, adjust based on your fryer’s capacity. Ingredients for a 9×11 inch Focaccia
- 5.6 oz all-purpose flour
- 5.6 oz cake flour
- 1.5 cups water (Room temperature)
- 1.4 oz extra virgin olive oil
- 2 tsp salt
- 3 pinches sugar
- 1 packet instant yeast for savory preparations (16 g)
- 3.5 oz cooked ham
- 7 oz stracchino cheese
- to taste sesame seeds (Optional)
- to taste extra virgin olive oil

What you need to prepare the liquid focaccia
- 1 Hand whisk
- 1 Bowl
- 1 Air Fryer
- 1 Non-stick baking pan 9×11 inch

Steps
Pour into a bowl and dissolve salt, sugar, and yeast with water and oil, mixing with a whisk
Add the flour
Keep mixing with the whisk until you get a smooth batter, it should be liquid
Generously grease with olive oil the bottom of the pan you will use for cooking the focaccia
Now pour half of the batter, completely covering the bottom
Add the sliced cooked ham and distribute the stracchino or whatever you’ve decided to use to fill it
Cover with the remaining batter and level it with the back of a spoon. Sprinkle the surface with sesame seeds (optional) and drizzle with olive oil
Preheat the fryer for 2-3 minutes and cook at 392°F for 18 minutes
Remove the focaccia from the oven, let it warm up
Your stuffed liquid focaccia is ready, cut and serve it! Try it and let me know
