Pistachio Muffins in Air Fryer

Pistachio Muffins in Air Fryer are those single-portion treats that everyone agrees on, no matter how you prepare them. Convenient and easy to carry, I always bring them with me to the office for a mid-morning snack. A pantry sweet with a delicious and rustic taste due to the soft and crunchy contrast given by the pistachio inserted in the dough, partly ground into flour and partly coarsely crumbled.

Muffins can be prepared in various ways: with Nutella, with yogurt and chocolate chips, swirled with Coconut and Cocoa and even Sweet Zucchini, all simple and quick preparations to make.

To prepare Pistachio Muffins, you only need a few ingredients, which are mixed in a bowl, and once again, the cooking in the Air Fryer turned out perfect, and like all the desserts I prepare in the fryer, they can be baked in a traditional oven. Perfect for breakfast, snack, and after pasta, perhaps accompanied by a pistachio or hazelnut cream.

Ingredients

The egg and yogurt should be at room temperature or taken out of the fridge for 20/30 minutes.

  • 2/3 cups all-purpose flour
  • 1/3 cup sugar
  • 1 egg
  • 1/4 cup non-fat Greek yogurt (or 1/3 cup of plain yogurt)
  • 2.1 oz pistachios (1.4 oz to be ground and 0.7 oz to be chopped with a knife)
  • 2 tbsp sunflower oil
  • Half packet baking powder
  • as needed powdered sugar

Steps

Before you begin, remember to keep the egg and yogurt at room temperature

  • Start by grinding 1.4 oz of pistachios in the grinder and coarsely chop the remaining with a knife

  • In a bowl, beat the egg with the sugar using the electric whisk

  • Beat for a few minutes until you get a light and frothy mixture

  • Add the oil in a thin stream, beating at maximum speed

  • Then add the yogurt at room temperature

  • Continue beating for a few minutes

  • Now add the sifted flour and baking powder

  • Continue beating with the whisks at low speed until you get a soft and homogeneous mixture

  • Add the ground pistachios and mix well

  • Now add the coarsely chopped pistachios

  • Using a spatula or spoon, fold the mixture from bottom to top

  • Insert the paper liners inside the aluminum ones

  • Pour the mixture into each liner leaving about a 3/8 inch border

  • Preheat the fryer for 2/3 minutes and cook at 340°F for 18 minutes, always do the toothpick test, if it comes out completely dry the muffins are ready otherwise continue for a couple more minutes

  • Take the muffins out and let them cool

  • Dust with powdered sugar and serve your delicious Pistachio Muffins

Variations and Tips for Pistachio Muffins in Air Fryer

Pistachio Muffins can be prepared with both Greek yogurt and regular yogurt, either non-fat or whole, plain, the important thing is that it is at room temperature as I wrote in the ingredient section and in the preparation steps, for a successful muffin. You can replace the pistachio with walnuts or hazelnuts.

They can be stored in an airtight container for several days. If you want to make more, just double the doses.
