Meat Pinwheels in Air Fryer

Meat Pinwheels, cooked in an Air Fryer, are a great alternative to the classic stuffed meatloaf. A tasty and simple idea to bring to the table on any occasion, a second course that everyone agrees on, both adults and children. Furthermore, the dough does not contain eggs, perfect for those who are intolerant or need to reduce their consumption of this ingredient.

The dough for the Meat Pinwheels is prepared in advance by letting it rest in the refrigerator for a few hours, but if you are in a hurry you can place it in the freezer for an hour. These steps are essential for slicing it, otherwise, it would be too soft and would ruin during cutting.

For the meatloaf, I used mixed ground pork/beef, stale bread soaked with milk, and stuffed with speck and sliced provola and arugula, but you can vary the ingredients with other types of cold cuts and cheeses.

  • 10.5 oz mixed ground meat (beef/pork)
  • 2.5 oz stale bread
  • 1/2 cup milk
  • 1.4 oz Grana Padano cheese grated
  • to taste chopped parsley (fresh or frozen)
  • 1 clove fresh garlic (chopped)
  • to taste salt and pepper
  • 2.5 oz sliced speck
  • 4.2 oz provola (sliced)
  • 1.1 oz arugula

Steps

  • In a bowl, break the stale bread into pieces and soak it with milk. Let it rest for 10 minutes until the bread completely absorbs the milk. After resting, crumble it further with your hands.

  • Add the ground meat, the Grana Padano, the parsley, chopped garlic, salt, and pepper.

  • Mix the dough well. At this point, you can place it in the refrigerator for about an hour, in its bowl covered with plastic wrap, or prepare the stuffed meatloaf immediately. I always prefer to prepare it in advance so that the dough is more compact.

  • After resting, spread the dough between two sheets of parchment paper, forming a rectangle a few inches thick.

  • First cover with the slices of speck and then with the provola.

  • Finish the last layer with arugula.

  • With the help of parchment paper, roll it and form a sausage, sealing the closure well.

  • Wrap it in parchment paper and place it in the refrigerator for 3 hours or in the freezer for 1 hour only if you used fresh ground meat and not defrosted.

  • After resting time in the refrigerator or freezer, you can cut the meatloaf into slices about 1 inch thick.

  • Transfer it to the air fryer grill.

  • Cook now at 356°F for 8 minutes.

  • Here are your Meat Pinwheels ready. Serve them hot accompanied by a salad or a sauce.

Storing the Meat Pinwheels

The Meat Pinwheels can be stored in the refrigerator for a few days and reheated in the air fryer for a few minutes when needed.

The Meat Pinwheels can also be cooked in a traditional oven at 356°F for about 15 minutes.

Preheat the pan with a drizzle of oil or a knob of butter, add the meat pinwheels, and cook over medium heat for a few minutes on both sides. If you want, you can deglaze them with white wine.
