Mushroom Cakes in Air Fryer

If you love mushrooms and want a different and tasty way to prepare them, then Mushroom Cakes in Air Fryer are the perfect recipe for you! They are delicious and perfect as an appetizer, but you can also enjoy them as a main dish or as a snack for an aperitif or buffet.

To cook these Mushroom Cakes I used only my Air Fryer: I cooked the champignon mushrooms in a pan, once ready, I transferred them to a bowl along with eggs, flour, and cheese, and in a few minutes, I cooked them in muffin molds, inserting a piece of cheese in the center to make them even tastier.

Ingredients

  • 12 oz champignon mushrooms (sliced)
  • 2 eggs
  • 3 tablespoons flour
  • 1.75 oz Grana Padano cheese, grated
  • 1 oz soft table cheese
  • 1 clove garlic
  • to taste chopped parsley (fresh)
  • to taste extra virgin olive oil
  • 1 dried red chili pepper
  • to taste salt and pepper
  • A few sprays extra virgin olive oil
  • to taste breadcrumbs (for the muffin cases)

Steps

  • Rinse the mushrooms under running water and pat them dry with paper towels. Transfer them to a baking dish with a garlic clove and season with olive oil, salt, pepper, crushed chili pepper, and some parsley stems

  • Cook at 356°F for 8 minutes

  • If there is too much liquid remaining in the baking dish, strain them with a sieve and remove the garlic and parsley stems

  • While the mushrooms cool, chop the parsley

  • In a bowl, beat the eggs with the Grana Padano cheese using a whisk

  • Add 3 tablespoons of flour and mix again

  • Now add the mushrooms, parsley, salt, and pepper to the mixture

  • Mix the ingredients well

  • Grease the inside of the muffin cases with some oil and sprinkle them with breadcrumbs

  • Fill the muffin cases by inserting cheese cubes

  • After filling all the molds, spray a little oil on the surface and transfer them to the grill

  • Insert the tray into the air fryer and cook at 338°F for 15 minutes and until the surface is golden

  • Remove the tray, let them cool for a few minutes and use a knife to detach them from the edges of the mold

  • Here are the mushroom cakes ready to be served!

Storage of Mushroom Cakes

Mushroom Cakes can be stored at room temperature for one day, in the refrigerator for a couple of days in their molds, covered with aluminum foil. When needed, heat them up for a few minutes in the air fryer
