7 Jar Coconut Bundt Cake in Air Fryer

This 7 Jar Coconut Bundt Cake, cooked in an air fryer, is not only simple to prepare, but it’s soft and super delicious with its exotic taste and aroma that will win you over at first bite.

The bundt cake is delicious on its own or accompanied by a cup of tea or coffee and the good thing is it keeps well for several days, maintaining its soft and fluffy texture (if it doesn’t get finished immediately, of course!). To prepare it, forget the scale, but remember to keep the yogurt jar, which will be used to measure the ingredients. If you want, you can enrich the 7 Jar Coconut Bundt Cake in the air fryer, with chocolate chips or chopped nuts, but I assure you it’s delicious even as it is.

If you don’t have coconut yogurt, you can use plain yogurt and you can substitute corn starch with potato starch. Use both the yogurt and eggs at room temperature or take them out of the refrigerator at least 30 minutes before preparing the cake and follow all the steps to achieve a perfect bundt cake. Ingredients

  • 1 jar yogurt (coconut)
  • 1 jar all-purpose flour
  • 1 jar corn starch
  • 1 jar coconut flour
  • 2 jars sugar
  • 1 jar corn oil (or sunflower)
  • 1 packet baking powder
  • 1 pinch salt
  • 3 eggs
  • to taste powdered sugar (For finishing)

Steps

  • Before starting, remember to use yogurt and eggs at room temperature. Pour the yogurt into a small bowl and set aside, wash and dry the jar. In another large bowl, pour the 2 jars of sugar, add the eggs and whisk with an electric beater until you get a light and fluffy mixture

  • Now gradually add the jar of seed oil and continue to beat the mixture for a few minutes

  • Now incorporate the yogurt and mix

  • In another bowl, sift the flours, corn starch, and baking powder and add a pinch of salt

  • Incorporate it all into the mixture of eggs, sugar, and yogurt and mix until you obtain a smooth and homogeneous mixture without lumps

  • Butter and flour the pan and pour in the cake mixture

  • Preheat the air fryer to 320°F for 2/3 minutes and bake for 35 minutes, do the toothpick test no earlier than 20 minutes of baking.

  • Take the cake out of the oven and wait for it to cool completely before removing it from the pan

  • Dust it with powdered sugar or coconut flour, cut it into slices and serve. I hope you enjoy this recipe as much as I did!
