Great for introducing more veggies into your diet without sacrificing taste.
These sweet zucchini muffins in the air fryer are also quick to prepare: just grate the zucchini into julienne, squeeze it to remove its water, and mix it with the rest of the ingredients in a bowl, including walnuts and cinnamon which add that extra touch. Ingredients
- 2/3 cup all-purpose flour
- 1/2 cup zucchini
- 2 1/2 tbsp butter
- 1/4 cup sugar
- 1/4 cup chopped walnuts (or chopped walnut kernels)
- 1/2 tsp ground cinnamon
- 1/2 tsp baking powder
- 1 egg
- 1 pinch salt
- to taste powdered sugar

Steps
Start by melting the butter in a bain-marie or microwave
After washing the zucchini, trim it and julienne it using a grater with large holes. Reserve one tablespoon for decoration and let it drain in a colander.
In a bowl, add the sifted flour and baking powder, a pinch of salt, the lightly beaten egg, chopped walnuts, sugar, cinnamon, well-squeezed zucchini, and finally the melted butter.
Mix everything with the help of a spoon
Insert the paper muffin tins into the aluminum ones, this way they won’t deform during baking, and distribute the mixture in the liners
Preheat the fryer for 2/3 minutes and cook on the grill or air fry tray at 320°F for 20 minutes, do the toothpick test to check the baking
Remove them from the fryer and let them cool
Dust the muffins with powdered sugar and decorate with the julienne zucchini
Oven Baking for Muffins
You can bake the Muffins in a preheated oven at 350°F for 25/30 minutes, always do the toothpick test
Tips
You can also use silicone molds; if you decide to use aluminum ones directly, double the doses because they are larger, in this case, you will have to butter and flour the liners
