- 7 oz spinach (fresh)
- 5 oz sheep ricotta
- 4 eggs
- 3/4 oz grated Grana Padano (plus some to put on the surface)
- 2 oz Asiago (diced)
- to taste nutmeg (to grate or ground)
- to taste salt and pepper
- to taste breadcrumbs (for the pan and the surface of the frittata)
- 1 clove garlic
- to taste extra virgin olive oil

Steps
Wash the spinach thoroughly and cook them in the multicooker, in a pan, with 1 clove of garlic, a small coffee cup of water and a drizzle of extra virgin olive oil for 5 minutes with steam function. In a pan with a lid, one clove of garlic, extra virgin olive oil for a few minutes.
Place them in a sieve and press them to remove the liquid. Transfer them to a bowl and roughly chop them with scissors or a knife. Let them cool for a few minutes
Add the well-drained ricotta, salt, pepper, nutmeg and the grated Grana Padano and mix well. In another bowl, beat the eggs with a pinch of salt
Add the eggs to the ricotta and spinach, blend and add the Asiago previously diced
Grease the non-stick pan with oil and sprinkle with breadcrumbs
Pour the frittata mixture leveling well and sprinkle the surface with a bit of grated Grana Padano, breadcrumbs, and give a few sprays of oil
Place the pan on the air fryer grill and cook at 340°F for 15 minutes. If necessary, increase to 390°F for a few minutes
Remove the frittata from the oven and…enjoy your meal!
Cooking Tips for Ricotta and Spinach Frittata in Air Fryer
For even cooking of the frittata, use non-stick pans, as they are good heat conductors and promote cooking even at the base of the frittata, unlike silicone molds. I also advise against disposable aluminum molds, they retain a lot of moisture making it difficult to cook. The same goes for parchment paper which blocks cooking at the base of the pan.
