Breaded Cardoncelli in Air Fryer

Today I offer you a real treat: Breaded Cardoncelli in an Air Fryer. Cardoncelli are one of the most exquisite and delicious varieties of mushrooms. Their texture remains unchanged even after cooking and they are delicious even raw. Breaded Cardoncelli in an Air Fryer is a light version of the classic fried cooking with oil in a pan, without giving up the characteristic crunchiness using just a few sprays of oil… you’ll see how good they are!

A tip to keep in mind for a good result, but this applies to any recipe, is not to wash them under running water as, being spongy, they would absorb it and both the flavor and the success of the dish would suffer. Use a paper towel dampened with water or a cloth napkin to remove the dirt residues.

Ingredients

  • 1.1 lbs cardoncelli mushrooms
  • 5 oz breadcrumbs
  • 0.7 oz grated Grana Padano
  • 3 eggs
  • to taste chopped parsley (fresh)
  • to taste salt and pepper
  • Few sprays oil

Steps

  • First, clean the mushrooms: remove dirt with a paper towel dampened with water and remove the stem end. Slice them into 2/3 parts depending on the size of the mushroom

  • Prepare in a bowl the mix of breadcrumbs, grated Grana, salt, pepper, and parsley

  • In another bowl, lightly beat the eggs and dip the mushrooms well

  • Coat them in the breadcrumbs ensuring the mushroom adheres well to the breading

  • As you repeat the sequence, transfer the mushrooms directly onto the air fryer rack or the air fry tray if you have a basket fryer. You can lightly oil the racks before placing the mushrooms. Finally, spray a few times with oil

  • Insert the drawer or tray into the air fryer and cook at 356°F for 15 minutes. Shake 2/3 times for even cooking

  • Salt to taste and serve the Cardoncelli hot and crispy

Tips and Storage for Breaded Cardoncelli in Air Fryer

As with all fried foods, the advice is to consume them as soon as they are ready, but if there are leftovers, just heat them again in the air fryer for a few minutes.

Breaded Cardoncelli can be stored for a couple of days, covered with plastic wrap or in an airtight container, in the refrigerator.
