The Valentine’s Day Tart, cooked in an air fryer, is a heart-shaped dessert made with crumbly shortcrust pastry based on butter, flour, and eggs, filled with a simple whipped cream and mascarpone cream. A perfect dessert to celebrate Valentine’s Day and beyond… a dinner with friends or for a birthday party.
To make the Valentine’s Day Tart, I prepared the shortcrust following the blind baking method, filled it with the cream colored for the occasion once cooled, and with a simple decoration made with coconut flour and chopped pistachios. You can use the heart-shaped base and fill it as you prefer according to your tastes, great with custard and strawberries or berries like for this Fruit Tart with Custard.
The base requires some fundamental steps to achieve a crumbly and perfect shortcrust, and you can prepare everything in advance and once you have the cream ready, which must rest in the fridge for at least one hour, fill it, decorate it and serve it for the occasion.
The shortcrust quantities are for a heart-shaped mold 9×8.7×1.9 inches, adaptable to a round mold of 7/8 inches, while for cooking I used the Air Fryer, at the end of the recipe you will also find instructions to bake the shortcrust in an oven.

How to prepare the Valentine’s Day Tart in Air Fryer
For the preparation of the shortcrust pastry, follow the recipe for the Fruit Tart with Custard, with the ingredients listed here
After resting the dough in the refrigerator, on a work surface, roll out the shortcrust between 2 sheets of parchment paper dusted with flour, using a rolling pin,
Transfer the shortcrust into the previously buttered and floured mold, remove the excess dough, prick with the prongs of a fork, and place it in the freezer for 15 minutes or in the refrigerator for half an hour.
After the resting time, cover the shortcrust with parchment paper cut into a heart shape leaving the edges free. Place it in the center and cover it with dried beans, which will prevent the dough from rising and help maintain its shape
Preheat the air fryer for 3 minutes at 375°F, insert the pan and cook at 375°F for 10 minutes or until the tart edges are golden
Remove the mold
Gently remove the beans and parchment paper
Return the mold to the air fryer and continue cooking at 340°F for 8 minutes
Take it out and let it cool completely before removing it from the mold
Soak the gelatin in a bowl of cold water for 10 minutes.
In a small pot, heat 1 oz of cream, squeeze the gelatin and dissolve it in the cream and set aside
In another bowl, soften the mascarpone with the powdered sugar, setting aside 2 tablespoons for the cream you’re going to whip, add half a vial of red coloring and mix well
In the bowl, whip the remaining cream with the 2 tablespoons of powdered sugar and coloring
Once you have whipped the cream, combine it with the mascarpone cream together with the cream with gelatin, a little at a time and gently
Cover the bowl with cling film and place the cream in the refrigerator for 1 hour
Now you can fill the tart. Insert the cream inside the shell leveling it with a spatula. Cover the edges with coconut flour. Insert 2 heart-shaped cookie cutters of two sizes and distribute the coconut flour inside, pressing slightly and gently remove the cutters. With the chopped pistachios decorate the border as shown in the photo

Oven Cooking for Valentine’s Day Tart
Bake the shortcrust in a preheated oven at 375°F for 10 minutes with parchment paper and beans or until the edges are golden. After the first baking, remove the parchment paper and beans and continue baking at 340°F for 10 minutes
Storage of Valentine’s Day Tart
The Valentine’s Day Tart must be stored in the refrigerator, covered with cling film for 2/3 days
