Ricotta and Chocolate Chip Donuts

The Ricotta and Chocolate Chip Donuts are a variant of the fried Carnival fritters cooked in oil. I’ve adapted this recipe for cooking in an air fryer, much lighter, resulting in a soft and delicious dough that will conquer you at the first bite. Ready in just a few minutes because they do not require rising time and without sugar in the dough, only to cover them once ready. Ingredients

  • 2 eggs
  • 25 g ricotta cheese
  • 25 g butter
  • 125 ml 2% milk
  • 125 g all-purpose flour
  • Half grated lemon zest (untreated)
  • 1 pinch salt
  • 40 g dark chocolate chips
  • Half packet baking powder (8 g)
  • A few sprays extra virgin olive oil
  • as needed granulated sugar

Steps

  • In a small pot, heat the milk and melt the butter

  • Add the flour, ricotta cheese, grated lemon zest, a pinch of salt, and mix all the ingredients well

  • Remove from the heat and add one egg at a time, mix well. Add the next only after the first egg is completely absorbed and well mixed

  • Add the baking powder, mix and then add the chocolate chips

  • Pour the mixture into the previously oiled molds and spray a bit of oil on the donut surfaces

  • Place the molds in the air fryer and cook at 340°F for 12 minutes

  • Take them out, wait for the mold to cool slightly, remove the donuts, and roll them in granulated sugar

  • The donuts are ready to be enjoyed

I recommend enjoying them fresh, but you can store Ricotta and Chocolate Chip Donuts for 2/3 days in an airtight container
