Fried Yolk in Air Fryer

The Fried Yolk in Air Fryer is nothing more than a reinterpretation of the famous “Egg alla Carlo Cracco”, a multi-starred Chef. With this recipe, the Chef wanted to re-evaluate and make the egg the protagonist of the dish, as before him, eggs were simply an essential ingredient for many preparations, such as making fresh pasta, desserts, or one of the most classic dishes like the omelet where whole eggs are used and other ingredients according to taste like for the recipe of my Spring Onion Omelet in Air Fryer.

The recipe for Cracco’s Fried Yolk is the breaded and fried egg yolk, then paired with many ingredients. With this version, as I said, “reinterpreted,” the yolk is cooked in an air fryer managing to maintain, like the original version, a crispy outer crust, with inside, a liquid and creamy yolk. The recipe is quite simple, requiring only a minimal amount of skill and delicacy, during the breading step and transferring it to the fryer for cooking. To simplify this last step and to bring the intact yolk to the table, I thought of cooking it inside an aluminum cup greased with oil.

The original recipe calls for resting the yolk in the freezer for two hours before frying, with cooking in the fryer it was not necessary: once breaded it goes directly to cooking which lasts only a few minutes.

The idea of the Fried Yolk Recipe in Air Fryer came to me to avoid wasting yolks that I had left over from some dessert preparations using only egg whites. To avoid wasting them you can make meringues, I don’t have a recipe to offer you in this regard, but I can let you try something simpler: the Mini Nutella Soufflés in Air Fryer and the Nutella Muffins in Air Fryer. If you prefer savory preparations, you can also make an egg white only omelet.

Now, however, I’ll show you how to prepare the Fried Yolk in Air Fryer.

Ingredients

  • 2 yolks
  • as needed breadcrumbs
  • as needed salt
  • A few sprays oil

  • 1 Air Fryer
  • 2 Cupcake Liners in aluminum
  • 1 Small Bowl
  • 1 Spoon

Steps

  • Separate the yolk from the egg white and place it in a bowl where you have poured the breadcrumbs

  • Gently move the bowl in circular motions to make the breadcrumbs adhere

  • Remove the yolk with a spoon

  • Place the yolk inside the cupcake liner previously greased with a bit of oil. Repeat the operation for the rest of the yolks you have decided to prepare. Spray the surface with a bit of oil

  • Cook at 340°F for 2 minutes, the breading should be golden

  • Transfer the yolk to a plate, salt to taste and serve it

  • The fried yolk is ready, you can accompany it with a fresh salad and… don’t forget the bread for dipping!!
