Pork Tenderloin in Pistachio Crust

  • 1.1 lbs pork tenderloin
  • 1.8 oz pistachio crumbs
  • 2 tbsp breadcrumbs
  • 1 tbsp grated Grana Padano
  • 2 tbsp butter

Steps

  • This is the pork tenderloin I kept at room temperature, it will be easier to massage

  • On a plate, mix the pistachio crumbs, breadcrumbs, and Grana cheese

  • Spread the butter all over the meat, massaging well, and roll it in the crumbs making sure all sides adhere well

  • Transfer it to a slightly buttered non-stick pan

  • Cook at 356°F for 15 minutes, turn the tenderloin and continue at 392°F for 3 minutes. You can also turn it halfway through cooking, especially if your fryer has only one resistance.

  • Here’s the ready tenderloin, add salt once sliced

  • Transfer it to a cutting board, slice it and serve

If you want a lighter stuffing for the tenderloin, you can massage the butter with extra virgin olive oil
