I prepared a very simple and quick dough that I let rise for 2 hours and 15 minutes. The result was extraordinary: an elastic and soft dough and perfect cooking both on top and bottom. I didn’t use any spices or aromas, I simply added extra virgin olive oil and coarse salt, but you can add rosemary or the spices you prefer. The dough is also a perfect base for making great pizza.
If you don’t have a multicooker, you can let the dough rise in the oven with the light on, in a bowl covered with a cloth, for 3 to 4 hours or until it doubles in size.
Cooking the Focaccia in the Air Fryer is quick, and in a few minutes, you can serve a focaccia that is crispy on the outside and soft on the inside.

How to prepare focaccia in Air Fryer
Dissolve the yeast in a glass of lukewarm water. In a bowl, pour the flour, salt, and the teaspoon of sugar, mix. Add the extra virgin olive oil and the glass of water with the yeast and start kneading. Pour the lukewarm water a little at a time until you get a soft, elastic, and homogeneous dough and knead for a few minutes
Place the dough in a lightly floured pan. In the combi pan, put 1 cup of water, insert the grill, and place the pan with the dough on top. Start the “Prove” program and set for 2 hours and 15 minutes at 95°F

Grease a 9×11 inch pan with extra virgin olive oil and spread the dough directly in the pan, pour a little more extra virgin olive oil and with your fingers, let it penetrate into the dough, now sprinkle the surface with coarse salt.
Insert the pan in the preheated fryer with bake program at 410°F for 15 minutes
Take out the focaccia
Cut the focaccia into pieces and serve (in the photo, the piece in the foreground is turned to show you the base cooking)
Prepare the dough as described above. Place the bowl with the dough in a slightly warmed oven, cover with a cloth, and let rise for 3 to 4 hours and until doubled, with the light on. For cooking, proceed as above
Tips for preparing Focaccia in Air Fryer
You can divide the focaccia dough into 2 smaller pans, preheat the fryer for 3 minutes at maximum power. If your fryer reaches up to 392°F, check the cooking and continue for a few minutes if necessary. I recommend using non-stick or aluminum pans, avoid silicone pans as they keep the dough moist and it will struggle to cook well on the bottom, as well as avoiding the use of baking paper
