Valtellina Pizzoccheri in Air Fryer are a delicious and hearty main course and remain one of my favorite dishes! They will win you over with their creamy and crunchy texture at the same time. Pizzoccheri are a specialty from Valtellina that includes buckwheat pasta, potatoes, chard or cabbage, cheese, and butter flavored with garlic and sage.
My version is with chard, and for cheeses, I used fontina dop and montasio, typical cheeses from the area. To prepare Valtellina Pizzoccheri, you cook chard and potatoes together for a few minutes, then add the pasta and season it with melted butter and diced cheese. Once ready, transfer to a baking dish and bake, in this case, in the air fryer.

Ingredients
- 500 g pizzoccheri
- 1.1 lbs chard
- 1.1 lbs potatoes
- 7 oz fontina
- 3.5 oz montasio (or bitto or casera)
- 5 oz butter
- 2 sprigs sage
- 3 cloves garlic

Steps
Wash and cut the chard into pieces, peel the potatoes and dice them small. Put a large pot of salted water on the stove
As soon as the water boils, add the chard and potatoes. Cook them for about ten minutes, until the chard has softened
At this point, you can add the pasta, following the cooking times indicated on the box
Meanwhile, while the pasta is cooking, cut the cheese into pieces and set it aside
In a small pot, melt the butter over low heat, together with the sage and garlic
Remove the sage and garlic cloves
When the pasta is ready, drain it and put it back in the pot
Add the diced cheeses
And also add the butter. Mix and blend well
Transfer the pizzoccheri into one or two baking dishes, depending on the size of your air fryer
Bake for 10/15 minutes at 356°F until the surface of the pizzoccheri is golden
Serve them hot, they’re delicious
Tips on preparing and storing Valtellina Pizzoccheri in Air Fryer
You can prepare the pizzoccheri in advance and cook them in the air fryer before serving. In the original recipe, the pizzoccheri are layered like lasagna, but I prefer to mix all the ingredients well and transfer them to the dish already seasoned. Pizzoccheri in Air Fryer can be stored in the refrigerator for 2/3 days and can also be frozen ready-made. When needed, I recommend taking them out of the freezer in advance and thawing them in the refrigerator, and then grilling them in the air fryer once thawed.
