This cheesy potato casserole in the air fryer is super delicious. I didn’t know what to prepare for dinner and I had some potatoes and only 1 egg… too little to make a potato omelet that I like a lot, so I opened the fridge and found some slices of cooked ham and some crescenza cheese… and that’s how I ended up with this potato casserole. I cooked the potatoes as if I were making the classic potato omelet and combined them with what I had available… really excellent result!

How to prepare the potato casserole in the air fryer

  • After washing and peeling the potatoes, rinse them, dry them, and season them in a bowl with 2 tablespoons of olive oil and pepper, adding salt only at the end of cooking.

  • Transfer them to the grid of your air fryer and cook them at 390°F for 20 minutes, shaking the basket occasionally to ensure even cooking.

  • Once ready, add a bit of salt and let them cool.

  • While the potatoes are cooling, mix in a bowl the crescenza cheese, egg, Parmesan, diced string cheese, and chopped cooked ham, and add the cooled potatoes.

  • Transfer the mixture to the baking dish and place it on the air fryer grid or the shelf if you have an oven-style fryer.

  • Cook the casserole at 355°F for 15 minutes or until a golden crust forms on the surface.

  • Here is the super cheesy casserole ready!

Tips for storing the potato casserole

The Air Fryer Potato Casserole can be stored in the refrigerator for a couple of days, covered with plastic wrap or in an airtight container. You can substitute the cheese with whatever you have in the fridge or with your preferred choice.
