Guttiau Bread in Air Fryer

Guttiau Bread is nothing more than a richer and tastier version of pane carasau, a typical Sardinian flatbread made of durum wheat semolina. Guttiau Bread in the air fryer is just sheets of pane carasau brushed with oil and passed in the oven, in this case, in the air fryer for a few minutes, resulting in extremely crispy, light, and very tasty sheets. They are perfect as a snack to accompany an appetizer of cold cuts and cheeses. My family loves it, in fact, I make it often, and it disappears in no time!! You can also find guttiau bread ready-made in supermarkets, but I assure you that homemade is much better.

The recipe for guttiau bread in the air fryer is really very simple, you will need to prepare a mixture of oil, salt, and pepper and brush both sides of the sheet, placing them in the basket of your fryer. The sheets are very light, risking flying inside the basket and ending up on the heating element, so the advice is to weigh them down with a weight, I place a small tray on top of the sheets to keep them still. As for the cooking times, I started with 4 minutes, then gradually reduced to 2 minutes as the fryer heated up.

  • 6 sheets pane carasau
  • 5 tbsp extra virgin olive oil

Steps

  • Prepare the extra virgin olive oil emulsion in a bowl with a pinch of salt and pepper if desired

  • On a work surface, gently brush both sides of the sheet

  • If the sheet is very large, break it and insert it directly on the rack

  • Cover with a tray to prevent the sheet during cooking from ending up on the heating element. Start with 4 minutes of cooking at 392°F, as you cook the other sheets you will see that 2 minutes will be sufficient

  • This is the ready guttiau. You can serve it at the table broken into larger pieces or smaller pieces for an aperitif or a snack
