Ingredients
- 1.1 lbs potatoes
- 1 egg
- 1.4 oz Grated Grana Padano
- to taste salt and pepper
- 2.5 oz provola (diced)
- 5.3 oz bacon (sliced)
- to taste breadcrumbs
- to taste chopped parsley

Steps
After boiling or steaming the potatoes, mash them with a fork and let them cool for 10 minutes. Once cooled, you can add the Grana Padano, the egg, the chopped parsley, salt, and pepper
Mix the mixture well and place it in the fridge for an hour to firm up.
After the resting time, you can prepare the croquettes. Start by preparing the diced cheese that you will need to insert inside. Take a piece of the mixture and place the cheese in the center
With another bit of the mixture, close the croquette giving it the shape of a meatball. It will take the elongated shape typical of a croquette during cooking. If the mixture sticks to your hands, wet them with a little water
Form all the croquettes
Pour the breadcrumbs into a bowl or a deep plate and gently roll the croquettes, covering them completely
Now wrap the meatball in a slice of bacon. Use one slice per meatball
As you wrap them in bacon, transfer them to your air fryer rack
Cook at 356°F for 10 minutes, increase to 392°F and continue for another 5 minutes, the bacon should be crispy

Let them cool down a bit before transferring them to a plate for serving

No, it’s not necessary. The fat from the bacon will render out into the tray and will become very crispy and dry
Can I cook the cheesy potato croquettes with bacon in a pan and place it on the rack?
You can, but the result won’t be the same as the recipe. In the pan, the fat released by the bacon during cooking will remain, keeping moisture and compromising crispness. Also, very importantly, cooking on the rack allows the fat to drip into the tray, so you’ll have a much healthier dish.
