The Air Fryer Potato Cakes are a delightful single-serving appetizer with a filling of spinach, ham, and provolone, perfect for any occasion. However, potatoes are always delicious and versatile for many preparations, and we can serve them as a side dish with the recipe for Sandy Potatoes in Air Fryer or as an appetizer with Potato and Mushroom Baskets in Air Fryer.
To prepare them, just boil the potatoes, cook the spinach and let them flavor with a bit of garlic. A simple yet truly exquisite recipe. I cooked everything with my Ninja Combi multicooker https://www.amazon.it/dp/B0CZPKSGFV?tag=gz-blog-21&linkCode=osi&th=1&psc=1&ascsubtag=0-f-n-av_amichefriggyenonsolo but you can cook both the potatoes and the spinach using traditional methods.

Steps
How to prepare the Air Fryer Potato Cakes
Boil the potatoes, using your preferred method and available options. I cooked them with the steam program in 10 minutes in my Ninja
Once ready, transfer them to a bowl
Mash them with a fork and let them cool for a few minutes
Boil or steam the spinach and place them in a colander to drain
Sauté them with a clove of garlic and a drizzle of extra virgin olive oil for a few minutes
Transfer them to a bowl and add grated Grana Padano cheese, salt, pepper, shredded ham, and mix
Now that the potatoes have cooled, add the egg, Grana, milk, salt, and pepper
Mix the ingredients well
Sprinkle the bottom of the molds with some breadcrumbs. If using aluminum molds, grease them with oil and then sprinkle with breadcrumbs
Take some potato mixture and place it in the molds, add spinach in the center with ham and 3 cubes of provolone for each mold
Cover with more potato mixture and sprinkle the surface with some breadcrumbs and Grana
Spray some oil and place on the grill or tray of your air fryer
Cook at 338°F for 15 minutes and increase to 392°F for another 3 minutes or until the surface is golden
Here they are, ready to be enjoyed!
You can prepare the potatoes and spinach the day before, storing them in the refrigerator, and assemble the cakes and cook as needed
