Sicilian Quaresimali are typical cookies for this period, before Easter. The quaresimali were conceived to adhere to the strict religious rules of Lent, when consuming animal products like milk, lard, and eggs was forbidden.

Quaresimali are often enjoyed with dessert wines or coffee

Ingredients

Let’s see what we need to prepare

  • 3 1/2 oz egg whites
  • 3 1/2 cups almond flour
  • 2/3 cup all-purpose flour
  • 1 cup almonds
  • 1 orange zest (grated)
  • 1 lemon zest (grated)
  • 1 tsp ground cinnamon

  • 1 Bowl
  • 1 Baking Sheet

Steps

Let’s start preparing

  • Let’s start preparing the quaresimali; mix the almond flour with the all-purpose flour, 200 g of sugar, the cinnamon, and the grated zest of a lemon and an orange in a large bowl. Mix the ingredients and set aside.

    Pour the egg whites into a bowl and beat them to stiff peaks, gradually adding the remaining 100 g of sugar.

    Continue until you obtain a frothy and glossy mixture.

    Using a spatula, fold the egg whites into the flours, mixing until fully incorporated. At this point, add the whole almonds. Mix with the spatula to combine the ingredients and form two logs.

    Sicilian Quaresimali

Then place them on a baking sheet lined with parchment paper
Bake at 392°F for 12-15 minutes.
When the logs have cooled, slice them into cookies.
Bake them again at 338°F for 15 minutes.
Once cooled, your quaresimali are ready to be enjoyed
