Ingredients
- 12 zucchini flowers
- 1 cup sheep ricotta
- 2 tbsps grated Grana Padano
- 1 egg
- to taste chives (fresh)
- to taste salt and pepper
- A few sprays oil

- 6 Molds aluminum
- 1 Bowl
- 1 Air fryer
Steps
The zucchini flowers must be fresh and are very delicate; I recommend preparing them within 2 days of purchase
First, you need to remove the stem and the pistil of the flower by opening it very gently
With a slightly damp paper towel, clean the flower both inside and out
Oil the 6 molds and insert 2 zucchini flowers with the petals facing outward in each mold, covering and adhering them well to the base
Prepare the filling in a bowl with the ricotta, egg, Grana, chives, salt, and pepper, and mix everything together (I used fairly dry sheep ricotta)
Fill all the molds with the mixture, without exceeding the flower
Close the petals and give a spray of oil
Transfer the molds and cook at 340°F for 10 minutes or until golden
Gently remove from the molds and serve
