Have you ever had leftover egg whites? This is a delicious way to avoid wasting them and reuse them. The savory muffins in the air fryer will win you over not only for their taste but also for their texture: soft and tender inside and crunchy outside, thanks to the use of egg whites. They are easy and quick to make; just beat the egg whites almost to stiff peaks and add the rest of the ingredients.
The savory muffins in the air fryer are a fun idea to prepare an appetizer or a snack, like the Savory Plumcake in Air Fryer or the Savory Strudel with Stracchino, Mortadella, and Pistachio Crumbs. They can be filled as preferred; this version is with Parmesan, tuna, and seasoned pitted olives, but you can add cold cuts and cheese pieces to the batter.

Ingredients
- 2 egg whites (about 70 g)
- 1 1/4 cups flour
- 1/4 cup vegetable oil
- 7 tbsp water
- 1/2 cup grated Parmesan
- 3 oz canned tuna (canned)
- 1/3 cup pitted olives
- to taste salt
- to taste pepper
- Half a packet instant yeast for savory gluten-free preparations (about 8 g)
Tools
- 1 Air Fryer
- 1 Electric Whisk
- 1 Bowl
- 8 Muffin Molds silicone
Steps
Pour the egg whites into a bowl and start whipping them with the electric whisk. Then add a good pinch of salt and continue beating them almost to stiff peaks.
Now add the water and oil gradually and continue mixing.
Gradually incorporate the flour and yeast, continue mixing to blend well.
At this point, you can add the Parmesan, stirring with a spoon or spatula from bottom to top to avoid deflating the mixture.
Finally, add the rest of the ingredients: well-drained tuna and olives (reserve a few for decoration) and pepper. Mix and place the batter into silicone muffin molds, leaving space between the batter and the edge.
Place the molds on the air fryer rack and bake at 340°F for 23 minutes
Here are your muffins ready
You can replace the silicone molds with disposable aluminum ones; with these quantities, you will get 4 muffins. I recommend lightly oiling them and dusting them with breadcrumbs before adding the batter.
FAQ (Questions and Answers)
Can I use other types of molds?
Yes, of course, the number of muffins will depend on the size of the molds.
Can I use paper molds as well?
Yes, you can use paper molds, but I recommend placing them inside the aluminum ones to prevent the batter from shifting during cooking as the paper is very light.
