Pasta and potatoes is a humble, wintery, and hearty first course. A dish prepared with pasta that cooks together with potatoes cut into small pieces and previously stewed with a sauté of onion, to which clean and well-scraped parmesan crusts are added…a unique creaminess. Pasta and potatoes, like Pasta with lentils or Creamy broccoli risotto, are those dishes that evoke childhood always present on my family’s table.
The pasta shape must strictly be short; you can choose between mixed pasta, ditalini, or the elbows I used to prepare pasta and potatoes.
To achieve a beautifully creamy pasta, it is essential that the cooking is slow and stir often and gently. Then the parmesan crusts, cooked together with the pasta and potatoes, will give even more consistency to the creaminess and flavor. A truly amazing pasta. In short, a perfect first course for lunch, but also for dinner to warm up after a long cold winter day.

How to prepare pasta and potatoes
Chop the onion and place it in a pot with a nice drizzle of previously heated extra virgin olive oil. Meanwhile, wash and peel the potatoes into small pieces.
Once the onion has wilted, add the potatoes and let them flavor for a few minutes, stirring occasionally.
Add water to cover all the potatoes.
Add the tomato or paste, the salt, cover with the lid, and cook over low heat for about 20 minutes, the time needed for the potatoes to become tender. During cooking, check and stir often; if necessary, add some water. After the cooking time of the potatoes, add about a glass of water, bring to a boil, and add the pasta and parmesan crusts cut into small cubes.
This is the right consistency. You can add some pepper if you like and a sprinkle of parmesan.
