Lemon Cookies in an Air Fryer

The lemon cookies baked in an Air Fryer are soft, very fragrant, and melt in your mouth. Very simple to prepare: they are made with flour, eggs, and lemon juice…a delight, delicate and at the same time full of flavor.

Preparing the lemon cookies is really simple, no molds or other utensils are needed: just a bowl and a hand whisk. You form balls with your hands, roll them first in granulated sugar, then in powdered sugar, and transfer them to a baking sheet or the air fryer’s grill.

The lemon cookies, baked in an Air Fryer are perfect for a snack or breakfast, and just the aroma they will release once prepared will make you love them. They are also great for a buffet or an impromptu dinner invitation at a friend’s house.

Ingredients

  • 1 egg
  • 1 lemon juice
  • 3.5 oz vegetable oil
  • 7 tbsp granulated sugar
  • 2.5 cups flour
  • 1 tsp baking powder
  • 1 tbsp cornstarch
  • as needed granulated sugar (for finishing)
  • as needed powdered sugar (for finishing)

How to Prepare Lemon Cookies in an Air Fryer

  • With the whisk, beat the egg with the sugar until you get a light and frothy mixture. Add the lemon juice in a stream and the oil, continuing to mix with the whisk.

  • Add the flour, baking powder, and cornstarch, sifted, a little at a time

  • Obtain a smooth and homogeneous mixture

  • Pour some granulated sugar and powdered sugar into two separate bowls. Take portions of dough the size of a walnut. Roll each ball first in granulated sugar, then in powdered sugar to achieve the crackled effect when baking.

  • Place on the tray or grill, with the balls well spaced apart. Preheat the air fry program to 340°F for a couple of minutes

  • Insert the tray and bake for 5 minutes at 340°F, the cookies will swell, and cracks will form on the surface

  • After the first bake, without opening the door or drawer, lower the temperature to 320°F and continue for 10 minutes

  • The cookies should remain light on the surface. They should not darken; otherwise, they will lose softness. Let them cool on the tray for a few minutes before moving them to cool completely off the tray. Once cooked they are soft and need a few minutes to stabilize.

Storing Lemon Cookies

Lemon cookies keep for a long time when closed in a cookie jar, a tin box, or an airtight container, preferably glass.

Oven Baking

Preheat the oven to 375°F if static and to 340°F if convection, baking at these temperatures for the first 5 minutes. Without opening the door, continue at 340°F in static mode for 10 minutes and at 320°F in convection mode still for 10 minutes.
