The beef skirt steak is an unfairly underrated cut because it is truly delicious!! It’s a third-category cut found between the last ribs, near the sternum. It’s a tender product and is particularly suitable for those with iron deficiency. The beef skirt steak has little connective tissue and fat, but it has a truly unique taste.
The beef skirt steak does not require special seasonings, but with a simple marinade and a short cooking time, I opted to grill it in the air fryer, you will get tender and succulent meat. Once ready, it should be sliced and seasoned with extra virgin olive oil, salt, and pepper.
Another cooking method that enhances its flavor while maintaining all the properties of this meat is stewing… I will upload the recipe shortly, but let’s see how to prepare it in the air fryer.

Ingredients
- 4 slices beef skirt steak
- as needed extra virgin olive oil
- as needed chopped parsley
- 2 cloves garlic
- as needed salt and pepper

Steps
Place the meat in a bowl along with the EVO oil, salt, pepper, coarsely chopped parsley, and a couple of garlic cloves. Cover the bowl with plastic wrap and let it rest in the refrigerator for 4 hours
After the resting time, transfer it to a tray with its marinade
Insert the tray at the highest level of your air fryer if you have an oven-style fryer, if you have a basket-style fryer, place the tray directly on the grill and cook at 464°F for 10 minutes. I turned the meat during the last 3 minutes for more even cooking on both sides
If you prefer it rarer, finish cooking earlier or lower it to 392°F
Slice and season with a drizzle of EVO oil, salt, and pepper
