Cocoa Roll Filled with Coffee Cream


The cocoa roll is a fresh and delicious dessert, ideal for after meals or as a snack. A soft cocoa biscuit dough, cooked in an air fryer, then filled with a no-cook coffee cream with whipped cream and mascarpone.

Ingredients

The ingredients are for a 12×12 inch pan

  • 1/2 cup flour
  • 1/4 cup unsweetened cocoa
  • 3/4 cup sugar
  • 4 eggs
  • 1 pinch salt
  • 2 tablespoons fresh whipping cream
  • 2 cups coffee
  • 1/3 cup powdered sugar
  • 1 cup mascarpone

  • 1 Air Fryer
  • 1 Electric Whisk
  • 1 Baking Tray
  • 1 Parchment Paper

Steps

  • In a bowl separate the egg whites from the yolks and with the help of electric whisks beat them until stiff peaks form after adding a pinch of salt and set aside.

  • Still using the whisks, beat the yolks with the sugar until you get a light and frothy mixture.

  • Sift the flour and cocoa, then add them to the yolks, stirring gently.

  • Incorporate the egg whites a little at a time, mixing from the bottom up without deflating the mixture.

  • Line a rectangular or square baking tray with parchment paper and pour in the mixture, leveling it well.

  • Insert the tray and set the Bake program to 356°F for 10 minutes.

  • Once ready, transfer the biscuit dough onto a work surface, sprinkle it with granulated sugar, flip it onto another sheet of parchment paper and remove the baking parchment.

  • Cover it with plastic wrap and let it cool.

  • Meanwhile, prepare the cream by whipping the cold fridge cream, adding the mascarpone, coffee, powdered sugar, and mixing well.

  • Remove the plastic wrap from the biscuit dough and cover it with the cream.

  • With the help of parchment paper, roll it up, being careful not to break it.

  • Sprinkle it with powdered sugar.

    Of course, you can bake it at 392°F for 8-10 minutes
