The cookie cake is a delicious, quick, and no-bake treat; it resembles chocolate salami and is made of crumbled cookies mixed with a chocolate glaze.

After Easter, I found myself with a large number of Kinder chocolate eggs, far too many for my little one to eat, and also the warm weather arrived early this year, which is not good for chocolate… so I needed a recycling idea and the recipe for the cookie cake with Kinder chocolate was born.

Naturally, compared to the classic recipe, I had to “recalibrate” it using milk chocolate, so less butter and less sugar, on the surface a layer of the same simply melted chocolate.

You can customize it and make it even more delicious by adding nuts like hazelnuts or almonds, or cover it with a chocolate ganache.

Needless to say, everyone loved it, and it disappeared in a flash!!

Ingredients

  • 2 cups cookies
  • 3 tbsps sugar
  • 4 tbsps unsweetened cocoa powder
  • 2 tbsps butter
  • 5 oz milk chocolate (for me Kinder chocolate from Easter eggs)
  • 1/3 cup milk
  • 3 oz milk chocolate (from Kinder eggs)

Steps

  • To prepare the cookie cake with Kinder chocolate, start by coarsely chopping the cookies in a bowl, leaving some large chunks.

    In a small pot, combine sugar, cocoa, butter, and chocolate pieces. Place over low heat and melt, stirring well to create a smooth glaze without lumps, then remove from heat.

  • Pour the glaze over the cookies and mix well.

    Now put the mixture into a pan and press firmly to compact it. I used a 6-inch silicone mold, but you can use any size you prefer. If you’re not using a silicone pan, line the bottom and sides with parchment paper to easily remove the cake.

  • Melt another 3 oz of chocolate in a double boiler and distribute evenly over the cookie cake.

    Place in the refrigerator to set for two to three hours, then you can remove the cake and enjoy its deliciousness.
