Ingredients
- Half quart lactose-free milk
- 1/3 cup cornstarch
- 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- to taste mixed berries (optional)
- to taste ground turmeric (optional)

Steps
In a saucepan, beat the egg with the sugar until you get a smooth mixture.
Add the sifted cornstarch and mix well.
Slowly pour in the cold lactose-free milk, stirring continuously to avoid lumps.
Add the vanilla (and turmeric if you want a yellower color).
Put the saucepan on low heat and cook, stirring continuously with a whisk.
After a few minutes, the mixture will start to thicken. Continue stirring until it reaches the consistency of a velvety cream that coats the spoon.
Turn off the heat and pour the pudding into molds (or a single mold), then cover immediately with plastic wrap touching the surface, to prevent a skin from forming.Let cool at room temperature, then transfer to the refrigerator for at least 2 hours before serving.
