Steps for Cauliflower with Walnuts
Thoroughly wash the cauliflower and cut it into florets, which we will place in salted boiling water for about 2/3 minutes, or steam cook them for about 10 minutes. Drain them and set them aside. In a large pan, heat the oil and toast the coarsely chopped walnuts for a few minutes. Remove them from the pan, and in their place, add the breadcrumbs, toasting the bread for a few minutes until golden, setting aside like the walnuts, in a bowl.
In the same pan, add a bit of oil, and sauté the garlic and rosemary. Add the cauliflower and sauté it for a few minutes. Deglaze with wine on low flame, season with salt and pepper, cover and let cook until the cauliflower is tender but still firm. Add the walnuts and breadcrumbs, mix well to combine all ingredients. Serve the hot cauliflower, garnished with fresh chopped parsley, on its own or as a side dish
