Ingredients

  • 1 yellow pepper
  • 4 eggs
  • 1 tablespoon extra virgin olive oil

Steps

  • Wash and cut the yellow pepper into strips or cubes, removing seeds and internal filaments.

    In a non-stick pan, heat the extra virgin olive oil and cook the yellow pepper over medium heat for 10-12 minutes, until soft and well browned. Salt and pepper to taste.

    When the peppers are well cooked, move them to the edges of the pan, creating an empty space in the center. Crack the eggs directly into the pan, pouring them into the central space.

    Let them cook for a few seconds, then start gently stirring from the center towards the outside, gradually incorporating the peppers as well, until achieving a soft but cooked consistency.
