Ingredients for the preparation of the coffee and chocolate loaf cake

  • 4 eggs
  • 2 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 7 fl oz coffee
  • 1 pinch salt
  • 1 packet baking powder
  • 5 oz dark chocolate chips
  • 1 tablespoon powdered sugar

Steps for the preparation of the coffee and chocolate loaf cake

  • Break the eggs into a bowl. Start working with an electric whisk until they are light and foamy. Slowly add the vegetable oil while continuing to whisk. Work for a couple more minutes.

  • Incorporate the flour, cornstarch, and baking powder, all sifted. Add the cold coffee as well. Mix with a hand whisk until you get a homogeneous mixture. Finish with the salt and the slightly floured dark chocolate chips.

  • Pour into a loaf pan lined with parchment paper. In the center, make a groove in which to pour a thread of oil. Bake in a preheated, ventilated oven at 340°F for 40-50 minutes. Do the toothpick test anyway. Once cooled, remove from the pan and sprinkle with powdered sugar.

Storage

You can keep the loaf cake under a glass dome for a couple of days.
