  • Difficulty: Easy
  • Cost: Very economical
  • Preparation time: 30 Minutes
  • Portions: 4 people
  • Cooking methods: Oven
  • Cuisine: Italian
  • Seasonality: Spring, Summer

Ingredients

  • 2 peppers
  • 7 oz stale bread
  • 1 tbsp capers
  • 1 tbsp pecorino (or Parmesan)
  • 1 tsp pine nuts
  • 1 tbsp raisins
  • 1 bunch parsley
  • 4 olives
  • to taste olive oil
  • to taste salt
  • to taste pepper

Steps

  • Preparation of roasted peppers:

Wash the peppers and roast them on a grill or in the oven at 392°F until the skin darkens and peels off easily.
Cover them with aluminum foil or place them in a plastic food bag for a few minutes, so they soften and it becomes easier to remove the skin.
Peel the peppers, cut them in half, and remove the seeds and internal filaments.
Cut each pepper into wide strips, enough to roll the filling.

  • Preparation of the filling:
In a blender, place the stale bread and blend it until it becomes fine.

Add a clove of garlic, salt, pepper, oil, parsley, and pecorino or Parmesan, blend until everything is homogeneous and fine.

Divide the breadcrumbs into two parts, leave half in the blender and add the capers (rinsed from the salt), the raisins (previously soaked in warm water and then squeezed), the olives, the sun-dried tomato, and the pine nuts, chop for just a few seconds.

  • Assembly of the rolls:
Take a strip of pepper and first coat it with the simple breadcrumbs set aside, on both sides. Then arrange a tablespoon of filling (the seasoned breadcrumbs) over the entire internal surface of the pepper.
Roll the pepper around the filling, forming a roll. Repeat the operation with all the pepper strips. You will obtain about 4/6 rolls.

  • Cooking:
Arrange the rolls in a baking dish.
Sprinkle with a drizzle of oil and, if desired, another sprinkle of pecorino or Parmesan.
Bake in a preheated oven at 392°F for about 15-20 minutes, or until the surface is golden and crispy.
Serve the Sicilian style baked pepper rolls hot or at room temperature, as an appetizer or side dish.

    Wow, how good!
